Description

Ultimate Ambrosia Fruit Salad is a creamy, fruity dessert with a medley of vibrant fruits, marshmallows, and a sweet dressing, perfect for any occasion.

Ingredients

  1. For the crust:
  2. 1 ½ cups graham cracker crumbs
  3. 2 tablespoons melted butter
  4. 2 tablespoons sugar
  5. For the cheesecake filling:
  6. 2 (8 oz) packages cream cheese, softened
  7. 1 cup powdered sugar
  8. 1 teaspoon vanilla extract
  9. 1 ½ cups heavy cream, cold
  10. 1 tablespoon lemon juice (optional for extra tang)
  11. For the topping:
  12. 2 cups fresh strawberries, sliced
  13. 2 tablespoons sugar (optional, for macerating the strawberries)

Instructions

In a medium-sized bowl, whip the heavy cream until soft peaks form. Then, fold in the Cool Whip, sour cream, and powdered sugar. Stir until the mixture is smooth and well combined.

  1. In a large mixing bowl, combine the drained pineapple chunks, mandarin orange segments, mini marshmallows, and any other optional fruits like diced apple or sliced banana. Stir gently to avoid breaking up the fruit.
  2. Add the whipped cream mixture to the bowl with the fruit and marshmallows. Gently fold everything together until all of the fruit is coated with the creamy dressing.
  3. Stir in the shredded coconut and chopped nuts (if using). This adds an extra layer of flavor and crunch to the salad.
  4. Cover the Ambrosia Fruit Salad and refrigerate for at least 2 hours, or overnight, to let the flavors meld and the salad to chill.
  5. Before serving, give the salad a gentle stir and garnish with additional coconut or nuts if desired. Serve chilled and enjoy!

Notes

  • For a tropical twist, add tropical fruits like mango, papaya, or kiwi.
  • Make this a lighter version by using non-dairy whipped cream and sour cream for a vegan-friendly version.
  • Store leftovers in an airtight container for up to 3 days, but be aware that the fruit may release some juice.
  • Make this ahead of time for best results, allowing the flavors to meld and the salad to set in the fridge.
