Description

These Ube Cookies offer a delightful twist on classic cookies, featuring the vibrant purple hue and sweet, earthy flavor of ube (purple yam). Soft and chewy with a hint of ube halaya jam and extract, these cookies make a perfect dessert or snack that adds color and unique flavor to your baking repertoire.

Ingredients

Dry Ingredients

  • 1½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Wet Ingredients

  • ½ cup unsalted butter, room temperature
  • ½ cup brown sugar
  • 1 egg
  • ½ cup ube halaya jam
  • 1 teaspoon ube extract

Garnish

  • Assorted sprinkles (for garnish)

Instructions

  1. Prepare the dry ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside this flour mixture for later use.
  2. Prepare the wet ingredients: Using a stand mixer or hand mixer, beat the room temperature unsalted butter, brown sugar, egg, ube halaya jam, and ube extract on medium speed for 2-3 minutes until the mixture becomes light and fluffy.
  3. Combine dry and wet ingredients: Gradually add the flour mixture into the wet ingredients, mixing on low speed just until a soft dough forms. Scrape down the sides of the bowl as necessary. If the dough feels too sticky, you can chill it wrapped in plastic wrap for 15-30 minutes to one hour, though chilling is optional.
  4. Shape the dough balls: Preheat your oven to 350°F (175°C). Use a cookie scoop to portion tablespoon-sized dough balls. Press assorted sprinkles gently onto each dough ball so they stick. Arrange the dough balls on a parchment-lined baking sheet, spacing them about 2 inches apart.
  5. Bake the cookies: Bake in the preheated oven for about 10 minutes or until the cookies have spread slightly. Be careful not to overbake to maintain their soft and chewy texture.
  6. Cool and serve: Transfer the baked cookies to a wire rack to cool completely. Once cooled, enjoy the chewy ube cookies with their distinct purple color and sweet flavor.

Notes

  • Chilling the dough is optional but will help with easier shaping if the dough is too sticky.
  • Use fresh or good-quality ube halaya jam and extract for the best flavor and vibrant color.
  • Do not overbake to ensure the cookies remain soft and chewy.
  • Store cookies in an airtight container to maintain freshness for up to 3-4 days.
