Ingredients
Dry Ingredients
- 1½ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
Wet Ingredients
- ½ cup unsalted butter, room temperature
- ½ cup brown sugar
- 1 egg
- ½ cup ube halaya jam
- 1 teaspoon ube extract
Garnish
- Assorted sprinkles (for garnish)
Instructions
- Prepare the dry ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside this flour mixture for later use.
- Prepare the wet ingredients: Using a stand mixer or hand mixer, beat the room temperature unsalted butter, brown sugar, egg, ube halaya jam, and ube extract on medium speed for 2-3 minutes until the mixture becomes light and fluffy.
- Combine dry and wet ingredients: Gradually add the flour mixture into the wet ingredients, mixing on low speed just until a soft dough forms. Scrape down the sides of the bowl as necessary. If the dough feels too sticky, you can chill it wrapped in plastic wrap for 15-30 minutes to one hour, though chilling is optional.
- Shape the dough balls: Preheat your oven to 350°F (175°C). Use a cookie scoop to portion tablespoon-sized dough balls. Press assorted sprinkles gently onto each dough ball so they stick. Arrange the dough balls on a parchment-lined baking sheet, spacing them about 2 inches apart.
- Bake the cookies: Bake in the preheated oven for about 10 minutes or until the cookies have spread slightly. Be careful not to overbake to maintain their soft and chewy texture.
- Cool and serve: Transfer the baked cookies to a wire rack to cool completely. Once cooled, enjoy the chewy ube cookies with their distinct purple color and sweet flavor.
Notes
- Chilling the dough is optional but will help with easier shaping if the dough is too sticky.
- Use fresh or good-quality ube halaya jam and extract for the best flavor and vibrant color.
- Do not overbake to ensure the cookies remain soft and chewy.
- Store cookies in an airtight container to maintain freshness for up to 3-4 days.
