Ingredients

1 package (16 oz) potato gnocchi

1 lb chicken sausage, sliced (Italian or sun-dried tomato flavored)

2 cups Tuscan kale (Lacinato kale), chopped

1/2 cup sun-dried tomatoes, chopped

3 cloves garlic, minced

1/2 cup chicken broth

1/4 cup grated Parmesan cheese

2 tablespoons olive oil

Salt and pepper, to taste

Red pepper flakes (optional, for heat)


Instructions

  • Cook gnocchi: Bring a large pot of salted water to a boil. Cook gnocchi according to package instructions. Drain and set aside.

  • Finish with cheese: Sprinkle Parmesan cheese over the dish and stir well. Season with salt, pepper, and red pepper flakes if desired.
