Description

Turkey Taco Bowls with Cauliflower Rice offer a healthy, low-carb twist on a classic taco dish. Featuring lean ground turkey, seasoned with bold taco spices, and served over cauliflower rice, this meal is satisfying, nutritious, and quick to make. Perfect for a weeknight dinner or meal prep, it’s gluten-free and can be customized with your favorite toppings like avocado, salsa, and cheese.

Ingredients

For the Turkey Filling:

1 tablespoon olive oil

1 pound ground turkey

1 packet taco seasoning (or homemade seasoning)

1 cup water

Salt and pepper to taste

For the Cauliflower Rice:

1 medium head of cauliflower (or 1 bag of pre-made cauliflower rice)

1 tablespoon olive oil (for cauliflower rice)

Salt and pepper to taste

For the Toppings:

1/2 cup diced tomatoes

1/2 cup corn kernels (optional)

1/4 cup chopped cilantro

Lime wedges for serving

Optional toppings: shredded cheese, avocado, sour cream, salsa

Instructions

  • Prepare the Cauliflower Rice:

    • If using fresh cauliflower, grate it into rice-sized pieces using a box grater or food processor.

    • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the cauliflower rice and sauté for 5-7 minutes, stirring occasionally, until the rice is tender. Season with salt and pepper to taste. Remove from heat and set aside.

  • Cook the Turkey:

    • In a separate skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until browned and fully cooked (about 6-8 minutes).

    • Stir in the taco seasoning and water, then simmer for 3-4 minutes until the sauce thickens. Adjust seasoning with salt and pepper if needed.

  • Assemble the Bowls:

    • Spoon the cauliflower rice into individual bowls. Top with the cooked turkey mixture.

    • Add diced tomatoes, corn, and fresh cilantro on top. Squeeze a lime wedge over the bowl for an extra burst of flavor.

  • Serve:

    • Add any additional toppings such as shredded cheese, avocado, sour cream, or salsa. Serve immediately.

Notes

  • Vegetarian Option: Substitute the ground turkey with black beans, lentils, or plant-based crumbles for a meatless version.

  • Spicy Kick: Add diced jalapeños or hot sauce to the turkey mixture for an extra kick.

  • More Veggies: Include bell peppers, onions, or zucchini in the turkey mixture for added texture and nutrition.

  • Homemade Taco Seasoning: Combine chili powder, cumin, garlic powder, onion powder, paprika, oregano, salt, and pepper for a simple homemade seasoning mix.
