Ingredients
For the Chicken:
2 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
½ tsp paprika
Salt and pepper, to taste
For the Marinade:
½ cup pineapple juice (fresh or from the can)
¼ cup soy sauce
2 tbsp honey or brown sugar
1 tbsp lime juice
For the Rice:
1 cup long-grain white rice
1 can (20 oz) pineapple chunks, drained (reserve juice)
1½ cups water (or as per rice package instructions)
For Garnish:
1 tbsp fresh cilantro, chopped (optional)
¼ cup green onions, chopped (optional)

Marinate the Chicken: In a small bowl, mix the garlic powder, onion powder, paprika, salt, and pepper. Rub this spice mixture on the chicken breasts. In another bowl, mix pineapple juice, soy sauce, honey, and lime juice. Pour over the chicken and let marinate for 30 minutes to 1 hour.

Cook the Chicken: Heat olive oil in a large skillet over medium heat. Add the marinated chicken and cook for 5–7 minutes on each side, until golden brown and fully cooked. Remove the chicken and set aside.
