Description

Ingredients

1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
2 carrots, peeled and diced
2 celery stalks, diced
6 cups vegetable broth (or chicken broth)
1 can (14.5 oz) diced tomatoes
1 package (9 oz) cheese tortellini (fresh or frozen)
1 teaspoon dried Italian seasoning
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper (or to taste)
2 cups fresh spinach or kale, roughly chopped
Grated Parmesan cheese (optional, for garnish)


Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté for about 3 minutes, until softened.
  3. Stir in the garlic, carrots, and celery, and cook for another 3-4 minutes.
  4. Pour in the vegetable broth and diced tomatoes. Bring to a boil, then lower the heat and simmer for about 10 minutes.
  5. Add the tortellini to the pot and cook according to package instructions (3-5 minutes for fresh or 7-9 minutes for frozen).
  6. Stir in the Italian seasoning, salt, and pepper.
  7. Add the spinach or kale and cook for 1-2 minutes until wilted.
  8. Taste and adjust seasoning if needed. Garnish with Parmesan cheese if desired. Serve hot and enjoy!
