Description

Tomato Spinach Sausage Pasta is a hearty, flavorful dish combining savory sausage, fresh spinach, and a rich tomato sauce tossed with your favorite pasta. This comforting meal is easy to make and perfect for a satisfying weeknight dinner.

Ingredients

  1. 12 oz pasta (penne, rigatoni, or rotini)
1 lb Italian sausage (mild or spicy), casings removed
    3 cups fresh spinach
    3 cloves garlic, minced
1 can (14 oz) crushed tomatoes
    1/2 cup diced onion
    2 tablespoons olive oil
    1 teaspoon dried oregano
1/2 teaspoon red pepper flakes (optional)
    Salt and pepper to taste
    Grated Parmesan cheese for serving

Instructions

Cook pasta according to package instructions until al dente. Drain and set aside.

  1. In a large skillet, heat olive oil over medium heat. Add diced onion and cook until translucent, about 3-4 minutes.
  2. Add sausage to the skillet, breaking it up with a spoon. Cook until browned and cooked through, about 7-8 minutes.
  3. Stir in minced garlic, oregano, and red pepper flakes; cook for 1 minute until fragrant.
  4. Add crushed tomatoes, salt, and pepper. Simmer for 5-7 minutes to blend flavors.
  5. Stir in fresh spinach and cook until wilted.
  6. Add cooked pasta to the sauce and toss to coat evenly.
  7. Serve topped with grated Parmesan cheese.

Notes

  1. Use turkey sausage or plant-based sausage for a lighter or vegetarian option.
  2. Add mushrooms or bell peppers for extra vegetables.
  3. Use fresh tomatoes and tomato paste instead of canned tomatoes.
  4. Sprinkle with fresh basil or parsley for added freshness.
  5. Top with mozzarella cheese and bake briefly for a cheesy pasta bake.
  6. Store leftovers in an airtight container in the refrigerator for up to 3 days.
  7. Reheat gently on the stovetop or microwave, adding a splash of water or broth if needed.
