Description

Toffee Butterscotch Cake is a moist, buttery dessert studded with crunchy toffee bits and optionally enhanced with butterscotch chips, finished with a rich butterscotch glaze or frosting for a decadent treat.


Ingredients

  1. 2 1/2 cups all-purpose flour
  2. 2 tsp baking powder
  3. 1/2 tsp baking soda
  4. 1/2 tsp salt
  5. 1 cup unsalted butter, softened
  6. 1 1/2 cups brown sugar, packed
  7. 3 large eggs
  8. 2 tsp vanilla extract
  9. 1 cup sour cream or plain Greek yogurt
  10. 1/2 cup buttermilk
  11. 1 cup toffee bits (such as Heath Bits-O-Brickle)
  12. 1 cup butterscotch chips (optional)

For the glaze/frosting (optional):

  • 1/2 cup butter
  • 1 cup brown sugar, packed
  • 1/4 cup heavy cream
  • 1 1/2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch pan or two 8-inch round pans.

  1. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  2. In a large bowl, cream butter and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then mix in vanilla and sour cream.
  4. Alternate adding dry ingredients and buttermilk to the wet mixture, starting and ending with the dry ingredients.
  5. Fold in toffee bits and butterscotch chips (if using).
  6. Pour batter into prepared pan(s) and spread evenly.
  7. Bake 30–35 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool completely before adding glaze or frosting.
  9. For glaze: In a saucepan, melt butter and brown sugar until bubbly. Stir in cream until smooth. Remove from heat, whisk in powdered sugar and vanilla until pourable. Spread over cooled cake and allow to set.

Notes

  1. For a layer cake, double the frosting recipe.
  2. Add chopped nuts for extra crunch.
  3. Sour cream can be replaced with plain Greek yogurt.
  4. Ensure toffee bits are gluten-free if making a gluten-free version.
  5. Serve warm with ice cream for an indulgent dessert.
