Description

These Toasty Sweet Potato Bites with Marshmallows & Pecans make a delightful holiday side or appetizer, combining warm roasted sweet potatoes with a drizzle of maple syrup, gooey toasted marshmallows, and crunchy pecan halves. Perfectly portioned and easy to prepare, they’re a festive twist on classic sweet potato casserole, bringing cozy and indulgent flavors to your Thanksgiving or Friendsgiving table.

Ingredients

Sweet Potato Bites

  • 2 sweet potatoes (about 1 lbs)
  • 2 tbsp unsalted butter, melted
  • 1/4 tsp salt

Toppings

  • 4 medium-sized marshmallows, halved
  • 2 tbsp maple syrup
  • 8 pecan halves

Instructions

  1. Preheat the Oven: Set your oven to 425°F (220°C) to warm up while you prepare the sweet potatoes.
  2. Prepare Sweet Potatoes: Peel the sweet potatoes and cut each into four even slices to create bite-sized pieces.
  3. Coat Sweet Potatoes: Place the slices in a bowl, drizzle with melted butter, sprinkle with salt, and toss until each piece is evenly coated.
  4. Initial Baking: Arrange the coated sweet potato slices evenly on a baking tray. Bake for 15 minutes, then flip each slice to ensure even cooking and bake an additional 10 minutes until tender and slightly browned.
  5. Switch Oven Setting: Remove the tray from the oven and switch your oven to the grill/roast setting to prepare for toasting marshmallows.
  6. Add Maple Syrup: Drizzle the maple syrup evenly over the baked sweet potato slices to add sweetness.
  7. Top with Marshmallows: Place halved marshmallows on top of each sweet potato slice.
  8. Grill the Marshmallows: Place the tray back under the grill/roast setting and cook for 2–3 minutes, watching carefully, until the marshmallows are golden and toasted.
  9. Finish with Pecans: Remove from the oven and top each marshmallow-topped sweet potato bite with a pecan half for a crunchy finish.
  10. Serve Warm: Arrange on a serving platter and enjoy these cozy, festive bites fresh from the oven.

Notes

  • Keep a close eye on the marshmallows when grilling to prevent burning.
  • You can use either fresh or frozen sweet potatoes, but fresh offers the best texture.
  • For an extra touch, sprinkle a little cinnamon or nutmeg on the sweet potatoes before baking.
  • These bites are best served immediately for optimal marshmallow gooeyness.
  • Leftovers can be gently reheated in the oven but marshmallows may not be as soft.
