Description
These Toasted Marshmallow Caramel Rice Krispie Treats are a decadent twist on the classic cereal snack. Made by cooking a rich caramel sauce with butter, brown sugar, and apple cider, then melting in mini marshmallows, and mixing with crispy Rice Krispies. Toasted regular marshmallows are added for a smoky, golden crunch, making each bite irresistibly gooey with a hint of caramelized sweetness and a sprinkle of flaky salt for contrast. Perfect for parties or an indulgent treat.
Ingredients
Caramel Mixture
- 1 cup (2 sticks) salted butter, at room temperature
- 1 cup packed dark brown sugar
- 1/2 cup apple cider
- 1 teaspoon salt
Marshmallows & Cereal
- 1 bag (10-ounce) mini marshmallows
- 1 box (12-ounce) Rice Krispies cereal
- 1 bag (12-ounce) regular marshmallows
Instructions
- Prepare Pan and Broiler: Line a 9×13 inch pan with parchment paper to prevent sticking and make cleanup easier. Preheat your oven’s broiler to toast the marshmallows later.
- Make Caramel Base: In a large pot over medium heat, melt the butter with the brown sugar. Once melted, add the apple cider and bring the mixture to a boil. Stir constantly until the sugar dissolves and the mixture turns dark and bubbly, approximately 5 minutes. Stir in the salt. Reduce heat to low.
- Melt Mini Marshmallows: Add the mini marshmallows to the caramel mixture and stir continuously until completely melted and smooth, about 5 minutes. Remove the pot from heat.
- Combine with Cereal: Quickly stir in the Rice Krispies cereal until fully coated with the caramel marshmallow mixture.
- Toast Regular Marshmallows: Spread the regular marshmallows on a baking sheet and place under the broiler for 1-2 minutes. Watch carefully, as they toast rapidly; aim for golden brown and slightly charred, but not burnt.
- Mix Toasted Marshmallows: Stir the toasted marshmallows into the cereal mixture right away to incorporate their smoky flavor and gooey texture.
- Shape and Set: Transfer the entire mixture into the lined pan. Spread evenly and press down firmly to compact. Sprinkle flaky salt on top to elevate the flavors.
- Cool and Serve: Allow the treats to cool and set at room temperature for 30 minutes to 1 hour before cutting into bars. Store leftovers in an airtight container at room temperature for up to 5 days.
Notes
- Be sure to watch the marshmallows closely while broiling, as they brown very quickly and can easily burn.
- Using apple cider adds a subtle fruity acidity that balances the sweetness of the caramel.
- Pressing the mixture firmly into the pan helps the treats hold together better when sliced.
- Flaky salt on top adds a delightful contrast to the rich sweetness.
- Store in an airtight container to maintain freshness and chewiness.
