Ingredients

8 oz rice noodles

2 tbsp vegetable oil

1 onion, thinly sliced

1 bell pepper, thinly sliced

1 carrot, julienned

2 garlic cloves, minced

2 tbsp soy sauce

2 tbsp oyster sauce

1 tbsp fish sauce

1 tbsp lime juice

1 tsp sugar

1/4 tsp red chili flakes (adjust to taste)

Fresh cilantro, chopped (for garnish)

Crushed peanuts (optional, for garnish)


Instructions

  • Cook the rice noodles according to the package instructions. Drain and set aside.

  • In a large skillet or wok, heat the vegetable oil over medium heat.

  • Add the onion, bell pepper, and carrot, and sauté for about 3-4 minutes, or until the vegetables begin to soften.

  • Add the minced garlic and cook for another 1 minute until fragrant.

  • Stir in the cooked rice noodles, soy sauce, oyster sauce, fish sauce, lime juice, and sugar. Toss everything together to coat the noodles and vegetables evenly.

  • Add the red chili flakes and stir to combine. Adjust the seasoning to your taste.

  • Garnish with fresh cilantro and crushed peanuts if desired.
