Description

Ingredients

  • 12 fresh shucked oysters, cleaned and drained
  • All-purpose flour (for dusting)
  • Vegetable oil (for frying)
  • 1/2 cup all-purpose flour (for batter)
  • 1/4 cup cornstarch
  • 1 egg yolk
  • 3/4 cup ice-cold sparkling water
  • Pinch of salt
  • 1/2 cup mayonnaise
  • 12 tsp wasabi paste (to taste)
  • 1 tsp lemon juice
  • 1/2 tsp soy sauce (optional)

Instructions

  1. In a small bowl, mix mayonnaise, wasabi paste, lemon juice, and soy sauce (if using). Chill until ready to serve.
  2. Heat vegetable oil in a deep fryer or heavy pot to 350°F (175°C).
  3. Dust the oysters lightly with flour to help the batter stick.
  4. In a separate bowl, combine flour, cornstarch, egg yolk, ice-cold sparkling water, and a pinch of salt. Stir briefly—do not overmix.
  5. Dip each floured oyster into the batter and fry immediately for 2–3 minutes until golden and crispy.
  6. Remove oysters with a slotted spoon and drain on paper towels.
  7. Serve hot with the chilled wasabi mayonnaise.
