Description

Ingredients

  1. 1/2 cup unsalted butter, melted
  2. 3/4 cup granulated sugar
  3. 1 large egg, room temperature
  4. 1 teaspoon vanilla extract
  5. 1/4 teaspoon almond extract (optional)
  6. 1 cup all-purpose flour
  7. 1/2 teaspoon baking powder
  8. 1/4 teaspoon salt
  9. 3/4 cup raspberries (fresh or frozen)
  10. 1/2 cup white chocolate chips or chopped white chocolate

Instructions

Preheat oven to 350°F (177°C) and line an 8×8-inch baking pan with parchment paper.

  1. In a large bowl, whisk together melted butter and sugar until smooth. Let it cool slightly.
  2. Add the egg, vanilla extract, and optional almond extract, and whisk until combined.
  3. In a separate bowl, mix flour, baking powder, and salt. Gently toss raspberries in the flour mixture.
  4. Fold the dry ingredients and raspberries into the wet ingredients just until combined.
  5. Stir in white chocolate chips gently.
  6. Spread the batter evenly in the prepared pan.
  7. Bake for 25–30 minutes, or until the edges are golden and the center is just set.
  8. Let blondies cool completely in the pan before slicing into bars.

  1. Use frozen raspberries straight from the freezer—no need to thaw.
  2. Tossing berries in flour prevents sinking and adds structure.
