Ingredients
- 1 lb ground beef or turkey
 - 1 small onion, diced
 - 1 can (15 oz) black beans, drained and rinsed
 - 1 can (15 oz) kidney beans, drained and rinsed
 - 1 can (15 oz) corn kernels, drained
 - 1 can (14.5 oz) diced tomatoes with green chilies
 - 1 can (8 oz) tomato sauce
 - 1 packet taco seasoning mix (or homemade seasoning)
 - 2 cups beef or chicken broth
 - Optional toppings: shredded cheese, sour cream, avocado, cilantro, tortilla chips
 
Instructions
In a skillet over medium heat, brown ground beef and diced onion until meat is cooked through and onion is softened. Drain excess fat.
- Transfer beef and onion mixture to the slow cooker.
 - Add black beans, kidney beans, corn, diced tomatoes, tomato sauce, taco seasoning, and broth. Stir to combine.
 - Cover and cook on low for 6-8 hours or on high for 3-4 hours.
 - Taste and adjust seasoning if needed before serving.
 - Serve hot with your favorite taco toppings.
