Ingredients

For the Salad:

1 lb ground beef, turkey, chicken, or vegetarian protein (black beans or tofu)

1 packet taco seasoning (or homemade taco seasoning)

1 head Romaine lettuce, chopped

1 cup cherry tomatoes, halved

1/2 red onion, thinly sliced

1 cup black beans, drained and rinsed (optional)

1/2 cup corn kernels (fresh, frozen, or canned)

1 cup shredded cheddar or Mexican blend cheese

1/2 cup sour cream or Greek yogurt

1/4 cup salsa

1/2 cup crushed tortilla chips

Fresh cilantro, chopped (optional garnish)

Instructions

  • Cook the Meat:
    In a skillet over medium heat, cook the ground beef (or your protein choice) until browned, breaking it up as it cooks. Drain any excess fat. Add taco seasoning and a splash of water (according to the packet instructions) and stir to combine. Let it simmer for a few minutes, then set aside.

  • Prepare the Salad Base:
    While the meat is cooking, chop the Romaine lettuce and add it to a large salad bowl. Add the cherry tomatoes, red onion, black beans, and corn.

  • Assemble the Salad:
    Once the meat is cooked and seasoned, add it to the salad. Toss everything together until evenly mixed.
