1 packet taco seasoning (or homemade taco seasoning)
1 head Romaine lettuce, chopped
1 cup cherry tomatoes, halved
1/2 red onion, thinly sliced
1 cup black beans, drained and rinsed (optional)
1/2 cup corn kernels (fresh, frozen, or canned)
1 cup shredded cheddar or Mexican blend cheese
1/2 cup sour cream or Greek yogurt
1/4 cup salsa
1/2 cup crushed tortilla chips
Fresh cilantro, chopped (optional garnish)
Lime wedges for serving
Instructions
-
Cook the Meat:
In a skillet over medium heat, cook the ground beef (or your protein choice) until browned, breaking it up as it cooks. Drain any excess fat. Add taco seasoning and a splash of water (according to the packet instructions) and stir to combine. Let it simmer for a few minutes, then set aside. -
Prepare the Salad Base:
While the meat is cooking, chop the Romaine lettuce and add it to a large salad bowl. Add the cherry tomatoes, red onion, black beans, and corn. -
Assemble the Salad:
Once the meat is cooked and seasoned, add it to the salad. Toss everything together until evenly mixed. -
Add Toppings:
Sprinkle the shredded cheese on top and add a dollop of sour cream or Greek yogurt. Spoon some salsa over the top and sprinkle crushed tortilla chips for crunch. -
Garnish and Serve:
Garnish with fresh cilantro and serve with lime wedges for an extra burst of flavor.
