Ingredients

  • 4 large sweet potatoes, peeled and thinly sliced
  • 1 cup heavy cream
  • 1 cup milk
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme or rosemary (optional)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Gruyère cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley or thyme for garnish (optional)

Instructions

  1. Preheat the Oven – Preheat your oven to 375°F (190°C) and butter a 9×13-inch baking dish.
  2. Prepare the Cream Sauce – In a medium saucepan, melt butter over medium heat. Add minced garlic and cook for 1-2 minutes until fragrant. Stir in heavy cream, milk, and fresh thyme or rosemary (if using). Season with salt and pepper. Bring to a simmer and cook for 3-5 minutes, stirring occasionally.
  3. Layer the Sweet Potatoes – Arrange a layer of sliced sweet potatoes in the prepared baking dish. Pour a portion of the cream sauce over the top and sprinkle with cheddar, Gruyère, and Parmesan cheese. Repeat the process until all sweet potatoes are layered, finishing with a generous layer of cheese on top.
  4. Bake – Cover the dish with foil and bake for 40 minutes. Remove the foil and bake for an additional 20-25 minutes, or until sweet potatoes are tender and the top is golden and bubbly.
  5. Garnish and Serve – Remove from the oven and let it sit for a few minutes. Garnish with fresh parsley or thyme, if desired. Serve hot and enjoy!
