Description

Sweet and Spicy Apple Parcels are flaky puff pastry pockets filled with tender apples, warming spices, and a hint of heat. Perfect for dessert or a cozy snack, these golden parcels are easy to make, deliciously aromatic, and can be served warm with a scoop of dairy-free ice cream or caramel drizzle.


Ingredients

  1. 2 large apples (Granny Smith or Honeycrisp), peeled and finely diced
  2. 2 tbsp brown sugar or coconut sugar
  3. 1/2 tsp ground cinnamon
  4. 1/4 tsp ground ginger or chili flakes (adjust to taste)
  5. 1 tsp lemon juice
  6. 1 sheet vegan puff pastry, thawed
  7. 2 tbsp plant-based milk (for brushing)
  8. Optional: 2 tbsp raisins or chopped nuts
  9. Optional: Powdered sugar, for dusting

Instructions

Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

  1. In a bowl, toss diced apples with lemon juice, sugar, cinnamon, and ginger or chili flakes. Add raisins or nuts if using.
  2. Roll out the puff pastry and cut into 6–8 equal squares or rectangles.
  3. Place a spoonful of the apple mixture in the center of each piece.
  4. Fold the pastry over to form a triangle or rectangle and press edges to seal. Crimp with a fork and poke the top with a knife or fork to vent.
  5. Brush each parcel with plant-based milk.
  6. Bake for 20–25 minutes until golden brown and puffed.
  7. Cool slightly before serving. Dust with powdered sugar if desired.

Notes

  1. Add a pinch of cayenne pepper for extra heat if desired.
  2. To keep the pastry crisp, reheat in the oven—not the microwave.
  3. Make mini versions for party platters or afternoon tea snacks.
  4. Serve with vegan caramel or whipped cream for a decadent touch.
