Sweet and Spicy Apple Parcels are flaky puff pastry pockets filled with tender apples, warming spices, and a hint of heat. Perfect for dessert or a cozy snack, these golden parcels are easy to make, deliciously aromatic, and can be served warm with a scoop of dairy-free ice cream or caramel drizzle.
Ingredients
- 2 large apples (Granny Smith or Honeycrisp), peeled and finely diced
- 2 tbsp brown sugar or coconut sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger or chili flakes (adjust to taste)
- 1 tsp lemon juice
- 1 sheet vegan puff pastry, thawed
- 2 tbsp plant-based milk (for brushing)
- Optional: 2 tbsp raisins or chopped nuts
- Optional: Powdered sugar, for dusting
Instructions
Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a bowl, toss diced apples with lemon juice, sugar, cinnamon, and ginger or chili flakes. Add raisins or nuts if using.
- Roll out the puff pastry and cut into 6–8 equal squares or rectangles.
- Place a spoonful of the apple mixture in the center of each piece.
- Fold the pastry over to form a triangle or rectangle and press edges to seal. Crimp with a fork and poke the top with a knife or fork to vent.
- Brush each parcel with plant-based milk.
- Bake for 20–25 minutes until golden brown and puffed.
- Cool slightly before serving. Dust with powdered sugar if desired.
Notes
- Add a pinch of cayenne pepper for extra heat if desired.
- To keep the pastry crisp, reheat in the oven—not the microwave.
- Make mini versions for party platters or afternoon tea snacks.
- Serve with vegan caramel or whipped cream for a decadent touch.
