Ingredients
- 1 lb elbow macaroni
- 1 cup mayonnaise
- 1 tablespoon white vinegar
- 2 tablespoons sugar
- 1 teaspoon Dijon mustard (optional)
- 1/2 cup diced celery
- 1/4 cup diced onion
- 1/4 cup diced red bell pepper (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika (optional)
- 1 tablespoon sweet relish (optional)
Instructions
- Cook the Macaroni: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions (8-10 minutes). Drain and rinse under cold water to stop cooking. Set aside to cool completely.
- Prepare the Dressing: In a large mixing bowl, whisk together the mayonnaise, white vinegar, sugar, Dijon mustard (optional), salt, black pepper, and paprika (optional) until smooth and well-combined.
- Combine the Salad: Add the cooled macaroni, diced celery, onion, and red bell pepper (optional) to the dressing. Mix until the macaroni and vegetables are evenly coated.
- Chill the Salad: Cover and refrigerate the salad for at least 2 hours, preferably overnight, to allow the flavors to meld together.
- Serve: Stir the salad before serving. Garnish with additional paprika or fresh parsley, if desired. Serve chilled.
Notes
- Add chopped hard-boiled eggs for extra creaminess and protein.
- For a spicy version, stir in cayenne pepper or hot sauce.
- Swap half of the mayo with Greek yogurt for a lighter option.
- For a vegan version, use dairy-free mayo and omit the eggs.
