Description

Sweet Amish Macaroni Salad is a creamy, tangy, and slightly sweet dish that’s perfect for potlucks, barbecues, or family gatherings. Tender macaroni noodles are coated in a rich dressing made with mayo, vinegar, sugar, and mustard, creating a well-balanced flavor. The addition of crunchy veggies gives this salad a delightful texture. Easy to make and even better when prepared ahead, it’s a must-have for your next celebration!

Ingredients

  • 1 lb elbow macaroni
  • 1 cup mayonnaise
  • 1 tablespoon white vinegar
  • 2 tablespoons sugar
  • 1 teaspoon Dijon mustard (optional)
  • 1/2 cup diced celery
  • 1/4 cup diced onion
  • 1/4 cup diced red bell pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika (optional)
  • 1 tablespoon sweet relish (optional)

Instructions

  • Cook the Macaroni: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions (8-10 minutes). Drain and rinse under cold water to stop cooking. Set aside to cool completely.
  • Prepare the Dressing: In a large mixing bowl, whisk together the mayonnaise, white vinegar, sugar, Dijon mustard (optional), salt, black pepper, and paprika (optional) until smooth and well-combined.
  • Combine the Salad: Add the cooled macaroni, diced celery, onion, and red bell pepper (optional) to the dressing. Mix until the macaroni and vegetables are evenly coated.
  • Chill the Salad: Cover and refrigerate the salad for at least 2 hours, preferably overnight, to allow the flavors to meld together.
  • Serve: Stir the salad before serving. Garnish with additional paprika or fresh parsley, if desired. Serve chilled.

Notes

  • Add chopped hard-boiled eggs for extra creaminess and protein.
  • For a spicy version, stir in cayenne pepper or hot sauce.
  • Swap half of the mayo with Greek yogurt for a lighter option.
  • For a vegan version, use dairy-free mayo and omit the eggs.
