Ingredients
- 1 1/2 cups all-purpose flour
 - 1 teaspoon baking powder
 - 1/2 teaspoon baking soda
 - 1/4 teaspoon salt
 - 1/2 cup unsalted butter, softened
 - 1 cup granulated sugar
 - 2 large eggs
 - 1/2 cup whole milk (or any milk of your choice)
 - 1/4 cup fresh lemon juice
 - 1 tablespoon lemon zest
 - 1 teaspoon vanilla extract
 
- 1 cup powdered sugar
 - 2 tablespoons fresh lemon juice
 - 1/2 teaspoon lemon zest
 
Instructions
Preheat your oven to 350°F (175°C) and grease and flour an 8-inch round or square cake pan, or line with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
 - In a large bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
 - Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
 - Stir in the fresh lemon juice and lemon zest, mixing well.
 - Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Start and end with the dry ingredients. Mix until just combined.
 - Pour the batter into the prepared pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
 - Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
 - While the cake cools, whisk together the powdered sugar, lemon juice, and lemon zest for the glaze.
 - Once the cake is cool, drizzle the lemon glaze over the top, letting it drip down the sides. Serve once the glaze has set.
 
Notes
- For added texture, fold in fresh or frozen blueberries into the batter before baking.
 - To make it dairy-free, substitute the butter with dairy-free butter and use almond or coconut milk in place of whole milk.
