Description

Enjoy a refreshing homemade Summer Skies Drink inspired by Starbucks, featuring a vibrant blend of berries, coconut milk, and popping boba. This delightful summer beverage combines fruity extracts, blue spirulina for a natural blue hue, and the unique texture of raspberry popping boba for a fun and flavorful treat.

Ingredients

Summer Berry Refresher Base

  • 1 ½ cups water
  • 1 cup white grape juice
  • ½ cup granulated sugar
  • 1 ½ tsp citric acid
  • 1 tsp raspberry extract
  • 1 tsp blackberry extract
  • ¼ tsp blueberry extract
  • ¼ tsp blue spirulina powder

Drink Assembly

  • ½ cup Summer Berry Refresher Base
  • ½ cup sweetened coconut milk
  • ¼ cup raspberry popping boba
  • Ice, as needed

Instructions

  1. Make the Summer Berry Refresher Base: In a medium saucepan, combine water, white grape juice, granulated sugar, citric acid, raspberry extract, blackberry extract, blueberry extract, and blue spirulina powder. Whisk the mixture over low heat until all ingredients are well combined and the blue spirulina powder is fully dissolved. Remove from heat and transfer the base to a large jar. Allow it to cool completely before proceeding.
  2. Mix the Drink: Pour ½ cup of the cooled Summer Berry Refresher Base and ½ cup of sweetened coconut milk into a cocktail shaker or a large jar with a lid. Add a handful of ice and shake vigorously until the ingredients are well combined and chilled. Set the mixture aside.
  3. Assemble the Drink: Add ¼ cup of raspberry popping boba to a tall glass followed by a handful of ice. Strain the shaken Summer Skies Drink mixture into the glass over the boba and ice. Insert a boba straw and enjoy immediately for a refreshing experience.

Notes

  • Blue spirulina powder gives the drink its distinctive blue color naturally; you can find it online or in specialty health stores.
  • Adjust sweetness by varying the amount of granulated sugar in the base according to your taste preference.
  • If you prefer a dairy-free version, ensure the coconut milk you use is sweetened and non-dairy.
  • For a larger batch, multiply the ingredients accordingly but keep the proportions consistent.
  • Raspberry popping boba adds a fun burst of flavor and texture but can be omitted if unavailable.
