Description

Stuffed Dates with Peanut Butter & Chocolate are a quick, no-bake treat made with Medjool dates, creamy peanut butter, and rich melted chocolate. They’re sweet, salty, chewy, and indulgent — like a healthier candy bar.


Ingredients

  1. 10 Medjool dates, pitted
  2. 23 tablespoons peanut butter (or any nut or seed butter)
  3. 1/2 cup dark chocolate or semi-sweet chocolate chips
  4. 1 teaspoon coconut oil (optional, for smoother melted chocolate)
  5. Pinch of sea salt (optional, for sprinkling)

Instructions

Slice each date lengthwise and remove the pit, keeping the date intact like a small boat.

  1. Fill each date with about a teaspoon of peanut butter.
  2. In a microwave-safe bowl, melt the chocolate with coconut oil (if using) in 20–30 second intervals, stirring until smooth.
  3. Drizzle or dip each stuffed date with the melted chocolate.
  4. Place the dates on a parchment-lined tray and sprinkle with sea salt if desired.
  5. Chill in the refrigerator or freezer for 10–15 minutes until the chocolate sets.
  6. Store in an airtight container and enjoy as needed.
