Ingredients
- 10 Medjool dates, pitted
 - 2–3 tablespoons peanut butter (or any nut or seed butter)
 - 1/2 cup dark chocolate or semi-sweet chocolate chips
 - 1 teaspoon coconut oil (optional, for smoother melted chocolate)
 - Pinch of sea salt (optional, for sprinkling)
 
Instructions
Slice each date lengthwise and remove the pit, keeping the date intact like a small boat.
- Fill each date with about a teaspoon of peanut butter.
 - In a microwave-safe bowl, melt the chocolate with coconut oil (if using) in 20–30 second intervals, stirring until smooth.
 - Drizzle or dip each stuffed date with the melted chocolate.
 - Place the dates on a parchment-lined tray and sprinkle with sea salt if desired.
 - Chill in the refrigerator or freezer for 10–15 minutes until the chocolate sets.
 - Store in an airtight container and enjoy as needed.
