Description
Stuffed Dates with Chocolate Almond Butter are an indulgent treat that balances the rich chocolate, creamy almond butter, and the natural sweetness of dates. These nutrient-packed bites are perfect for a quick snack or dessert.
Ingredients
- 10-12 medjool dates, pitted
1/4 cup almond butter (smooth or chunky)
2 tablespoons dark chocolate chips
1 tablespoon coconut oil
Pinch of sea salt (optional)
Chopped almonds or other nuts for topping (optional)
Instructions
Prepare the dates: Slice the dates in half lengthwise and remove the pits. Set aside.
- Make the chocolate almond butter filling: In a microwave-safe bowl, melt the dark chocolate chips with coconut oil. Microwave in 20-second intervals, stirring between each, until smooth. Stir in the almond butter until well combined.
- Stuff the dates: Spoon the chocolate almond butter mixture into the center of each date half, filling generously.
- Top with toppings: Optionally, sprinkle a pinch of sea salt over the stuffed dates and top with chopped almonds or other nuts for extra crunch.
- Chill the stuffed dates: Refrigerate for 15-20 minutes to allow the chocolate to firm up.
- Serve: Once the chocolate is hardened, remove the dates from the fridge and enjoy!
