Ingredients

  1. 4 boneless, skinless chicken breasts
    1/2 cup cream cheese, softened

    1 tablespoon garlic, minced
    1 teaspoon dried oregano
    1/2 teaspoon dried basil
    Salt and pepper to taste
    1/2 cup breadcrumbs (optional, for coating)
    2 tablespoons olive oil (for searing)
    Toothpicks or kitchen twine to secure rolls

Instructions

Preheat your oven to 375°F (190°C).

  1. Use a sharp knife to carefully slice each chicken breast horizontally to create a pocket for the filling, being sure not to cut all the way through.
  2. In a mixing bowl, combine the cream cheese, mozzarella cheese, Parmesan cheese, chopped spinach, garlic, oregano, basil, salt, and pepper. Mix well to combine.
  3. Stuff each chicken breast with a generous amount of the cheese mixture, then carefully roll the chicken up, securing the ends with toothpicks or kitchen twine to hold the filling inside.
  4. If you prefer a crispy coating, roll each stuffed chicken breast in breadcrumbs to coat the outside.
  5. Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the chicken rolls and sear for 2-3 minutes on each side, until golden brown.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C).
  7. Remove the toothpicks or kitchen twine before serving.
