Description

Delight in these luscious Strawberry Brownies featuring a rich blend of melted white chocolate and buttery batter, enhanced with the tangy sweetness of freeze dried strawberries. Baked to perfection and topped with a strawberry-infused glaze, these brownies are a perfect treat for any occasion.

Ingredients

Brownie Batter

  • 1 ⅓ cups white chocolate chips (melted)
  • ¾ cup unsalted butter (melted)
  • 2 eggs
  • 1 egg yolk
  • 1 ¼ cups granulated sugar
  • 2 tsp vanilla extract
  • 1 ¼ cups flour (all purpose or gluten free)
  • pinch sea salt
  • 2 cups freeze dried strawberries

Strawberry Glaze

  • 1 cup powdered sugar
  • 1 tbsp milk (plus additional drops if needed)
  • 3 tbsp freeze dried strawberries

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350 degrees Fahrenheit and line a 9-inch square pan with parchment paper to ensure easy removal of the brownies.
  2. Mix Wet Ingredients: In a large mixing bowl, combine the melted butter and melted white chocolate, stirring until well incorporated.
  3. Add Eggs and Sugar: Beat in the eggs, egg yolk, granulated sugar, and vanilla extract vigorously until the mixture becomes light and frothy, creating a smooth batter base.
  4. Process Strawberries and Combine Dry Ingredients: Place 2 cups of freeze dried strawberries in a food processor and grind until finely powdery. Fold this powder along with the flour and a pinch of sea salt into the wet mixture, stirring gently to blend all ingredients evenly.
  5. Bake the Brownies: Pour the batter into the prepared pan and bake for 25 to 27 minutes. Test doneness by inserting a toothpick into the center; it should come out with moist crumbs but no wet batter.
  6. Prepare Strawberry Glaze: Once the brownies have cooled completely, finely grind 3 tablespoons of freeze dried strawberries in the food processor. In a small bowl, mix the powdered sugar, milk, and ground strawberries until a creamy glaze forms. Add an extra drop of milk if the glaze is too thick.
  7. Glaze and Serve: Spread the strawberry glaze evenly over the cooled brownies. Cut into 16 servings and enjoy!

Notes

  • For gluten-free option, use gluten-free all-purpose flour.
  • Ensure brownies have cooled completely before glazing to prevent melting the glaze.
  • Freeze dried strawberries add concentrated flavor without adding moisture to the batter.
  • Adjust milk in glaze for desired consistency.
  • Store brownies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
