Description

This Strawberry Slab Pie is a delightful dessert featuring a flaky, buttery crust topped with a luscious strawberry and jello filling. Perfect for gatherings, it offers a refreshing, sweet treat that sets beautifully after chilling.

Ingredients

Crust

  • 2 1/4 cups all purpose flour
  • 1/4 cup sugar
  • 1/4 teaspoon kosher salt
  • 1 cup cold butter, cut into cubes

Filling

  • 6 oz strawberry jello
  • 1 1/2 cups sugar
  • 1/3 cup cornstarch
  • 1/2 teaspoon salt
  • 20 oz Sprite (2 1/2 cups)
  • 32 oz strawberries, washed and tops removed

Garnish

  • Whipped topping or whipped cream

Instructions

  1. Preheat Oven: Preheat your oven to 325°F (163°C) to prepare for baking the crust.
  2. Make Crust Dough: In a mixing bowl, combine the all purpose flour, sugar, kosher salt, and cold cubed butter. Mix together until the mixture becomes crumbly, resembling coarse crumbs.
  3. Form Crust: Press the crumbly dough evenly into an 18 x 12 inch sheet pan. Use a fork to prick holes all over the crust to allow steam to escape while baking.
  4. Bake Crust: Place the sheet pan in the oven and bake for 22 to 25 minutes or until the crust turns a light golden brown color.
  5. Cool Crust: Remove the crust from the oven and transfer it to a wire rack to cool completely before adding the filling.
  6. Prepare Filling: In a saucepan over medium heat, combine the strawberry jello, sugar, cornstarch, salt, and Sprite. Stir the mixture continuously and bring it to a boil.
  7. Thicken Filling: Keep whisking the filling as it heats until it thickens noticeably. Once thickened, remove the saucepan from the heat and allow the filling to cool to room temperature.
  8. Slice Strawberries: While the filling cools, slice the strawberries evenly.
  9. Assemble Pie: Arrange the sliced strawberries neatly over the cooled crust in the sheet pan.
  10. Add Filling: Pour the cooled jello filling over the arranged strawberries, ensuring an even layer.
  11. Chill Pie: Place the assembled pie in the refrigerator and chill for at least 2 hours or until the filling is fully set.
  12. Serve and Garnish: Before serving, top the pie with whipped topping or whipped cream as desired.

Notes

  • Use cold butter to ensure a flaky crust texture.
  • Pricking the crust before baking prevents unwanted puffing.
  • Allow both crust and filling to cool before assembly to avoid soggy crust.
  • Refrigerate long enough for the filling to set properly, at least 2 hours.
  • Fresh strawberries can be substituted with frozen if thawed and drained well.
  • For a less sweet pie, reduce sugar slightly in the filling.
