Ingredients
Crust
- 2 1/4 cups all purpose flour
- 1/4 cup sugar
- 1/4 teaspoon kosher salt
- 1 cup cold butter, cut into cubes
Filling
- 6 oz strawberry jello
- 1 1/2 cups sugar
- 1/3 cup cornstarch
- 1/2 teaspoon salt
- 20 oz Sprite (2 1/2 cups)
- 32 oz strawberries, washed and tops removed
Garnish
- Whipped topping or whipped cream
Instructions
- Preheat Oven: Preheat your oven to 325°F (163°C) to prepare for baking the crust.
- Make Crust Dough: In a mixing bowl, combine the all purpose flour, sugar, kosher salt, and cold cubed butter. Mix together until the mixture becomes crumbly, resembling coarse crumbs.
- Form Crust: Press the crumbly dough evenly into an 18 x 12 inch sheet pan. Use a fork to prick holes all over the crust to allow steam to escape while baking.
- Bake Crust: Place the sheet pan in the oven and bake for 22 to 25 minutes or until the crust turns a light golden brown color.
- Cool Crust: Remove the crust from the oven and transfer it to a wire rack to cool completely before adding the filling.
- Prepare Filling: In a saucepan over medium heat, combine the strawberry jello, sugar, cornstarch, salt, and Sprite. Stir the mixture continuously and bring it to a boil.
- Thicken Filling: Keep whisking the filling as it heats until it thickens noticeably. Once thickened, remove the saucepan from the heat and allow the filling to cool to room temperature.
- Slice Strawberries: While the filling cools, slice the strawberries evenly.
- Assemble Pie: Arrange the sliced strawberries neatly over the cooled crust in the sheet pan.
- Add Filling: Pour the cooled jello filling over the arranged strawberries, ensuring an even layer.
- Chill Pie: Place the assembled pie in the refrigerator and chill for at least 2 hours or until the filling is fully set.
- Serve and Garnish: Before serving, top the pie with whipped topping or whipped cream as desired.
Notes
- Use cold butter to ensure a flaky crust texture.
- Pricking the crust before baking prevents unwanted puffing.
- Allow both crust and filling to cool before assembly to avoid soggy crust.
- Refrigerate long enough for the filling to set properly, at least 2 hours.
- Fresh strawberries can be substituted with frozen if thawed and drained well.
- For a less sweet pie, reduce sugar slightly in the filling.
