Ingredients

Gelatin Mixture

Instructions

  1. Prepare Ramekins: Place six 4-ounce ramekins, custard cups, silicone molds, or dessert cups on a small baking sheet and grease with baking spray or butter to prevent sticking.
  2. Bloom Gelatin: Pour the half and half into a small saucepan and sprinkle the powdered gelatin evenly over the surface. Let it sit undisturbed for 5 minutes to allow the gelatin to bloom, which helps it dissolve properly later.
  3. Dissolve Gelatin: Heat the saucepan over medium-low heat, stirring occasionally for 3-4 minutes, until the gelatin has fully dissolved and the mixture is smooth, being careful not to let it boil.
  4. Add Strawberry and Sugar: Stir in the fresh strawberry puree and granulated sugar, continuing to heat and stir occasionally for another 3-4 minutes until the sugar completely dissolves into the mixture.
  5. Incorporate Cream and Flavorings: Remove the saucepan from heat and stir in the heavy cream, vanilla extract, and a pinch of sea salt to enhance the flavor and create a rich, creamy texture.
  6. Strain Mixture: Pour the mixture through a fine mesh sieve into a separate bowl to remove any lumps or strawberry seeds, ensuring a smooth panna cotta texture.
  7. Pour and Chill: Carefully pour the strained mixture into the prepared ramekins or cups. Place the baking sheet with the ramekins in the refrigerator and chill for 2 to 6 hours, or preferably overnight, until the panna cotta is fully set and firm to the touch.
