Description
This delightful Strawberry Panna Cotta recipe combines creamy gelatin-based custard with fresh strawberry puree for a refreshing, elegant dessert. Set in individual ramekins, this smooth and silky treat is perfect for serving at special occasions or as a sophisticated everyday indulgence.
Ingredients
Gelatin Mixture
- 1/2 cup half and half
- 1 packet unflavored powdered gelatin
Strawberry Puree Mixture
- 1 cup fresh strawberry puree
- 1/3 cup granulated sugar
Cream Mixture
- 1 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- 1 pinch sea salt
Instructions
- Prepare Ramekins: Place six 4-ounce ramekins, custard cups, silicone molds, or dessert cups on a small baking sheet and grease with baking spray or butter to prevent sticking.
- Bloom Gelatin: Pour the half and half into a small saucepan and sprinkle the powdered gelatin evenly over the surface. Let it sit undisturbed for 5 minutes to allow the gelatin to bloom, which helps it dissolve properly later.
- Dissolve Gelatin: Heat the saucepan over medium-low heat, stirring occasionally for 3-4 minutes, until the gelatin has fully dissolved and the mixture is smooth, being careful not to let it boil.
- Add Strawberry and Sugar: Stir in the fresh strawberry puree and granulated sugar, continuing to heat and stir occasionally for another 3-4 minutes until the sugar completely dissolves into the mixture.
- Incorporate Cream and Flavorings: Remove the saucepan from heat and stir in the heavy cream, vanilla extract, and a pinch of sea salt to enhance the flavor and create a rich, creamy texture.
- Strain Mixture: Pour the mixture through a fine mesh sieve into a separate bowl to remove any lumps or strawberry seeds, ensuring a smooth panna cotta texture.
- Pour and Chill: Carefully pour the strained mixture into the prepared ramekins or cups. Place the baking sheet with the ramekins in the refrigerator and chill for 2 to 6 hours, or preferably overnight, until the panna cotta is fully set and firm to the touch.
Notes
- Use fresh, ripe strawberries for the best flavor in the puree.
- Do not let the gelatin mixture boil, as high heat can damage gelatin’s setting properties.
- For a dairy-free version, substitute heavy cream and half and half with coconut cream and coconut milk, respectively, and ensure gelatin is replaced with a vegan alternative like agar agar.
- To unmold panna cotta easily, dip the ramekins briefly in warm water and run a knife around the edges before turning out onto plates.
- Chilling time can be extended overnight for best texture and flavor development.
