Ingredients
- For the sponge cake:
- 4 large eggs
- 1 cup all-purpose flour

- 2 cups fresh strawberries, pureed
- 1 ½ cups heavy cream

- 1 cup fresh strawberries, sliced
- 2 tbsp sugar
Instructions
Preheat the oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
- For the sponge cake: Beat the eggs and sugar until pale and fluffy, about 5-7 minutes. Add vanilla extract. Gradually fold in the sifted dry ingredients. Pour the batter into the cake pan and bake for 20-25 minutes. Let the cake cool completely on a wire rack.
- For the strawberry mousse: Bloom gelatin in cold water for 5 minutes. Microwave for 10-15 seconds until liquid. Whip the cream with powdered sugar until stiff peaks form. Puree the strawberries, strain to remove seeds, and mix with gelatin. Gently fold in the whipped cream.
- Assemble the cake: Place the cooled sponge cake on a serving platter. Spread the mousse evenly over the cake. Refrigerate for at least 4 hours to set.
- For the topping: Toss the sliced strawberries with sugar and let them macerate for 15-20 minutes. Decorate the top of the mousse cake with the strawberries.
- Serve: Slice and serve the cake chilled. Enjoy the light, creamy texture with fresh strawberry flavor!
