Ingredients
- 2 cups fresh strawberries, hulled and chopped
1/4 cup fresh lemon juice (about 2 lemons)
1/4 cup honey or sugar (adjust to taste)
1/2 cup water
1/2 cup coconut water or regular water (for extra hydration, optional)
Zest of 1 lemon (optional, for added lemon flavor)
Instructions
Prepare the strawberries: In a blender or food processor, combine the chopped strawberries, lemon juice, honey or sugar, water, and lemon zest (if using). Blend until smooth and well combined.
- Taste and adjust sweetness: Taste the mixture and adjust sweetness by adding more honey or sugar if desired.
- Pour into molds: Pour the strawberry-lemonade mixture into popsicle molds, leaving a little space at the top for expansion as they freeze.
- Freeze: Insert popsicle sticks and freeze for at least 4 hours or until fully frozen.
- Unmold and serve: Run warm water over the outside of the molds to release the popsicles. Gently pull them out and serve immediately.
