Description

Strawberry Icebox Cake is a no-bake dessert with layers of fresh strawberries, whipped cream, and graham crackers. The graham crackers soften as the cake chills, creating a creamy, dreamy treat that’s perfect for summer gatherings.


Ingredients

  1. 2 lbs fresh strawberries, hulled and sliced

  6. 1 package graham crackers (about 1416 whole crackers)

Instructions

Prepare the whipped cream mixture: In a large mixing bowl, beat the heavy cream until soft peaks form using an electric mixer. Set aside. In another bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and well combined.

  1. Combine the cream cheese and whipped cream: Gently fold the whipped cream into the cream cheese mixture until fully incorporated, creating a fluffy, smooth filling.
  2. Assemble the cake: Line the bottom of a 9×9-inch baking dish with a layer of graham crackers. Spread a generous layer of the cream mixture over the graham crackers. Add a layer of sliced strawberries on top of the cream mixture.
  3. Repeat the layers: Repeat the process, layering graham crackers, cream mixture, and strawberries until all ingredients are used, finishing with a layer of cream on top.
