Ingredients
- 8 oz cream cheese, softened
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup graham cracker crumbs
- 3 tbsp melted butter
- 2 cups fresh strawberries, diced
- 2 tbsp granulated sugar
- 1 tsp lemon juice (optional)
Instructions
In a small bowl, mix diced strawberries with granulated sugar and lemon juice (if using). Let sit for 10–15 minutes to macerate.
- In another bowl, mix graham cracker crumbs with melted butter until combined and crumbly.
- In a mixing bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla extract, and mix until fully incorporated.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until light and fluffy.
- Assemble the parfaits: Add a layer of graham cracker crumbs, then cheesecake filling, followed by macerated strawberries. Repeat layers as desired.
- Chill the parfaits for at least 30 minutes before serving for best texture.
