Description

Strawberry Bread is a soft, moist quick bread filled with fresh strawberries for a naturally sweet and fruity flavor. Perfect for breakfast, brunch, or snacking, this homemade loaf is simple, versatile, and family-friendly.


Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup granulated sugar
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 tsp vanilla extract
  • 1 ½ cups fresh strawberries, chopped
  • 23 tbsp milk (optional, for added moisture)


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a loaf pan or line with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat eggs and sugar until light and fluffy. Mix in oil and vanilla extract.
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined. Do not overmix.
  5. Gently fold in chopped strawberries.
  6. Pour batter into prepared loaf pan and smooth the top.
  7. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Toss strawberries in a little flour before folding them in to prevent sinking.
