Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 cup granulated sugar
- 2 large eggs
- ½ cup vegetable oil
- 1 tsp vanilla extract
- 1 ½ cups fresh strawberries, chopped
- 2–3 tbsp milk (optional, for added moisture)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a loaf pan or line with parchment paper.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, beat eggs and sugar until light and fluffy. Mix in oil and vanilla extract.
- Gradually add dry ingredients to wet ingredients, mixing until just combined. Do not overmix.
- Gently fold in chopped strawberries.
- Pour batter into prepared loaf pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- Toss strawberries in a little flour before folding them in to prevent sinking.
- Use frozen strawberries if fresh are unavailable—thaw and drain well first.
- Add-ins like nuts, chocolate chips, or citrus zest can be mixed in for variety.
