Ingredients

  • 1 lb flank steak (or your choice of steak)
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups cooked white or brown rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup diced tomatoes
  • 1/2 cup red onion, finely chopped
  • 1 avocado, sliced
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges
  • 1/2 cup shredded cheese (optional)
  • Sour cream (optional)
  • Salsa (optional)

Instructions

  1. Prepare the Steak: Heat olive oil in a skillet over medium-high heat. While it heats, rub the steak with chili powder, cumin, garlic powder, paprika, salt, and pepper. Once the skillet is hot, cook the steak for about 3-4 minutes per side for medium-rare to medium doneness.
  2. Rest the Steak: Remove the steak from the skillet and let it rest for 5-10 minutes to retain its juices and tenderness.
  3. Assemble the Burrito Bowl: Warm the black beans and corn in the skillet for 1-2 minutes. In a bowl, layer rice at the bottom, then add beans, corn, diced tomatoes, red onion, and other toppings of choice.
  4. Slice the Steak: After resting, slice the steak thinly against the grain.
  5. Add Toppings: Place the steak slices on top of the rice and veggies. Add avocado, cilantro, shredded cheese, sour cream, salsa, and a squeeze of lime for extra flavor.
