Ingredients
For the Steak Bites:
- 1 lb (450g) sirloin steak, cut into 1-inch cubes
- 1 tbsp olive oil
- 1 tbsp butter
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp smoked paprika
- ½ tsp dried thyme
- 1 tbsp Worcestershire sauce
- Fresh parsley (for garnish)
For the Potatoes:
- 1 lb (450g) baby potatoes, halved
- 1 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp paprika
Instructions
- Cook the potatoes – Heat a large skillet over medium heat. Add olive oil and potatoes, seasoning with salt, pepper, garlic powder, and paprika. Cook for 12-15 minutes, stirring occasionally, until golden and tender. Remove and set aside.
- Prepare the steak – While the potatoes cook, season steak bites with salt, pepper, paprika, and thyme.
- Sear the steak – In the same skillet, heat 1 tbsp olive oil over high heat. Add steak bites in a single layer and cook for 2-3 minutes per side until browned.
- Add garlic butter – Reduce heat to medium, add butter and minced garlic, stirring to coat the steak bites in the melted butter. Cook for another 1-2 minutes until fragrant.
- Combine and serve – Return potatoes to the skillet, tossing everything together. Garnish with fresh parsley and serve immediately.
Notes
- Use ribeye or New York strip for extra tenderness.
- Add red pepper flakes for a spicy kick.
- Swap potatoes for sweet potatoes for a slightly sweeter flavor.
- Serve with garlic aioli or chimichurri sauce for dipping.
