Description
Spicy Salmon Sushi Roll-Ups are a quick and flavorful sushi-inspired dish combining spicy salmon, fresh vegetables, and seasoned sushi rice wrapped in nori. Perfect for an easy appetizer, lunch, or light dinner.
Ingredients
- 1 cup cooked sushi rice
 - 2 tablespoons rice vinegar
 - 1 teaspoon sugar
 - 1/2 teaspoon salt
 - 4 sheets of nori (seaweed)
 - 1/2 pound sushi-grade salmon, finely chopped
 - 2 tablespoons mayonnaise
 - 1 tablespoon sriracha sauce (adjust to taste)
 - 1/2 cucumber, julienned
 - 1 avocado, sliced
 - Soy sauce, for serving
 
Instructions
In a small bowl, combine rice vinegar, sugar, and salt. Microwave for 30 seconds and stir until dissolved. Mix into cooked sushi rice and let cool.
- In another bowl, mix chopped salmon with mayonnaise and sriracha to create the spicy salmon mixture.
 - Place a nori sheet on a bamboo sushi mat or clean surface. Spread a thin layer of seasoned rice over the nori, leaving a 1-inch border at the top.
 - Arrange a line of spicy salmon mixture, cucumber, and avocado slices along the bottom edge of the rice.
 - Roll the nori over fillings tightly, sealing the edge with water.
 - Slice the roll into bite-sized pieces. Repeat with remaining ingredients.
 - Serve with soy sauce for dipping.

- Use cooked shrimp or imitation crab instead of salmon.
 - Add jalapeños or pickled ginger for extra spice.
