Description

Speedy Shepherd’s Pie is a quick and comforting twist on the classic, made with savory ground beef, mixed vegetables, and creamy mashed potatoes, ready in just 30 minutes for a satisfying weeknight dinner.

Ingredients

1 pound ground beef
1 medium onion, chopped
1 cup frozen mixed vegetables (peas, carrots, and corn work well)
1 tablespoon tomato paste
1 tablespoon Worcestershire sauce
½ cup beef broth
Salt and pepper, to taste
3 cups prepared mashed potatoes
½ cup shredded cheddar cheese (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Cook the Beef Mixture: In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat. Add the chopped onion and cook until softened. Stir in the frozen vegetables, tomato paste, Worcestershire sauce, and beef broth. Season with salt and pepper. Let it simmer for about 5 minutes.
  3. Assemble the Pie: Transfer the beef mixture into a baking dish. Spread the mashed potatoes evenly on top. If desired, sprinkle shredded cheddar cheese over the mashed potatoes.
  4. Bake: Place the dish in the oven and bake for 15-20 minutes, or until the top is golden and the filling is bubbly.
  5. Serve: Let the pie stand for 5 minutes before serving.

Notes

  • Vegetarian Version: Replace the ground beef with lentils or plant-based meat alternatives.
  • Different Proteins: Ground turkey, chicken, or lamb can also be used in place of beef.
  • Cheesy Topping: Mix some cheese into the mashed potatoes for a cheesy crust.
  • Spicy Kick: Add chili flakes or hot sauce to the beef mixture for extra heat.
  • Herb Infusion: Add fresh herbs like thyme or rosemary for an added layer of flavor.
