  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  • Cook the spaghetti according to the package instructions until al dente. Reserve about 1 cup of pasta water, then drain and set aside.
  • In a large pan, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
  • Add the ground beef or beef strips to the pan and cook until browned and cooked through. Season with salt and pepper to taste.
  • While the beef is cooking, whisk the eggs in a bowl and mix with the grated Parmesan and Pecorino Romano cheese. Add a pinch of salt and pepper.
  • Add the cooked spaghetti to the pan with the beef. Toss to combine, ensuring the pasta is coated with the beef and garlic mixture.
  • Remove the pan from the heat and immediately pour the egg and cheese mixture over the pasta. Toss quickly to create a creamy sauce, adding reserved pasta water a little at a time until you reach the desired consistency.
  • Serve hot, garnished with fresh parsley if desired.
