Description

Spaghetti Aglio e Olio is a classic Italian pasta dish bursting with garlicky, spicy flavors. Made with simple pantry staples like garlic, olive oil, and red pepper flakes, this quick and easy recipe is ready in under 20 minutes. Perfect for busy weeknights or as a flavorful side dish, this authentic Neapolitan pasta is both budget-friendly and incredibly satisfying.

Ingredients

  • 12 oz spaghetti
  • 6 cloves garlic, thinly sliced
  • ¼ cup extra virgin olive oil
  • ½ teaspoon red pepper flakes (adjust to taste)
  • ¼ cup fresh parsley, chopped
  • Salt, to taste
  • Black pepper, to taste
  • ½ cup reserved pasta water
  • Grated Parmesan cheese (optional)

Instructions

  1. Cook the Pasta – Boil a large pot of salted water and cook the spaghetti until al dente. Reserve ½ cup of pasta water before draining.
  2. Sauté the Garlic – In a large skillet, heat olive oil over medium heat. Add sliced garlic and cook until golden brown, stirring frequently to prevent burning.
  3. Add Spice – Stir in red pepper flakes and cook for a few seconds to release their flavor.
  4. Combine with Pasta – Add the drained spaghetti to the skillet and toss to coat in the garlic-infused oil. If needed, pour in a bit of reserved pasta water to loosen the sauce.
  5. Season & Garnish – Season with salt and black pepper to taste. Stir in chopped parsley and mix well.
  6. Serve – Dish out hot, garnished with grated Parmesan cheese if desired.

Notes

  • Prevent Garlic from Burning – Cook on medium-low heat and remove from heat once golden.
  • Spice Level – Adjust red pepper flakes based on preference.
  • Customization – Add shrimp, chicken, or sautéed veggies for extra variety.
  • Storage – Keep leftovers in an airtight container in the fridge for up to 3 days.
