  • 185 g All purpose flour, sifted
  • 1 teaspoon Baking powder
  • ¼ teaspoon Salt

Buttercream Frosting

  • 113 g Unsalted butter, room temperature
  • 120 g Powdered sugar, sifted
  • 2 tablespoons Sour cream, full fat, room temperature
  • Food coloring (optional)


Instructions

  1. Prepare the Cookie Dough: Using an electric hand mixer, whip the room temperature butter with granulated sugar for a few minutes until the mixture is light and fluffy. Then, add the egg and vanilla extract and continue whipping until well combined. Fold in the sour cream gently to maintain the airy texture.
  2. Incorporate Dry Ingredients: Sift together all purpose flour, baking powder, and salt into the wet mixture. Using a rubber spatula, fold the dry ingredients into the batter just until combined making sure not to overmix to keep the cookies tender.
  3. Shape Cookies: Line two baking sheets with parchment paper. Use a spoon or cookie scooper to portion the dough into 18 equal cookies, placing them comfortably spaced apart on the sheets to allow puffing during baking.
  4. Chill Dough: Refrigerate the cookie trays for at least 1 hour. This step helps the dough firm up, which results in better texture and shape retention during baking.
  5. Preheat Oven and Bake: Preheat your oven to 175℃ (350°F) without fan. Bake the cookies for about 14 minutes, monitoring closely until the bottoms are fully baked and golden while the tops remain pale and soft.
