Ingredients
Dough Ingredients
- 1 cup warm water
- 0.25 oz instant dry yeast (1 packet)
- 1 1/2 tsp salt
- 1 tbsp sugar
- 3 cups flour
- 1 egg
- 3 tbsp unsalted butter
Boiling Solution
- 8 cups water
- 1/4 cup baking soda
Toppings
- Coarse salt (to taste)
- 1/2 cup cinnamon sugar
Instructions
- Activate yeast: In a large mixing bowl, whisk together warm water, instant dry yeast, salt, and sugar until mixed well and the yeast begins to activate.
- Make dough: Gradually add flour to the yeast mixture while stirring with a wooden spoon. When stirring becomes difficult, switch to an electric mixer fitted with a bread hook and mix until a smooth dough ball forms.
- Let rise: Transfer the dough ball to a large greased bowl, cover with plastic wrap, and place in a warm spot to rise for about an hour until the dough doubles in size.
- Divide and cut dough: Punch down the risen dough and divide into 6 equal balls. Roll each ball into a rope about 1 inch wide and 8 to 10 inches long. Cut the ropes into 1-inch pieces and place them on a parchment-lined baking sheet.
- Preheat oven: Preheat your oven to 425ºF (220ºC) to prepare for baking the pretzel bites.
- Boil dough: In a large pot over high heat, bring 8 cups of water and the baking soda to a boil, then reduce to a simmer. Drop pretzel bites into the simmering water 10 at a time, avoiding overcrowding. Boil each batch for 30 seconds, then remove using a slotted spoon and return to the parchment-lined baking sheet.
- Egg wash dough bites: Whisk the egg with a splash of water in a small bowl. Using a pastry brush, coat both sides of each pretzel bite with the egg wash.
- Bake: Bake the pretzel bites in the preheated oven for 13-15 minutes or until they turn a light golden brown.
- Brush with butter: Melt the unsalted butter and brush it over the hot pretzel bites immediately after baking for a rich finish.
- Add toppings: For salted bites, sprinkle coarse kosher or sea salt on top and serve with cheese sauce. For cinnamon sugar bites, toss the warm pretzels in cinnamon sugar until coated and serve with cream cheese sauce.
Notes
- Ensure the water used to activate the yeast is warm, not hot, to avoid killing the yeast.
- Boiling pretzel bites briefly in baking soda water gives them a traditional chewy crust and distinctive flavor.
- Use a large pot for boiling to avoid overcrowding, which can cause the bites to stick together.
- Egg wash ensures a shiny, golden crust.
- Customize toppings to your preference: coarse salt for a classic taste or cinnamon sugar for a sweet twist.
- Serve immediately for the best texture and flavor.
