Description

Smoked Salmon Cucumber Bites are a refreshing, no-cook appetizer that combines the delicate flavor of smoked salmon with the crispness of fresh cucumber, topped with cream cheese, dill, and lemon for a burst of flavor.

Ingredients

  1. 1 large cucumber, sliced into 1/4-inch thick rounds
  2. 4 oz smoked salmon, sliced into small pieces or strips
  3. 4 oz cream cheese, softened (can substitute with dairy-free cream cheese)
  4. 1 tablespoon fresh dill, chopped (plus extra for garnish)
  5. 1 teaspoon lemon juice (freshly squeezed)
  6. Salt and freshly ground black pepper, to taste
  7. Lemon wedges, for serving (optional)

Instructions

Prepare the cucumber: Wash the cucumber thoroughly and slice it into 1/4-inch thick rounds. Lay the cucumber slices on a platter or serving tray.

  1. Prepare the cream cheese spread: In a small bowl, combine the softened cream cheese with the chopped fresh dill, lemon juice, salt, and pepper. Mix until smooth and well combined.
  2. Assemble the cucumber bites: Spread a small dollop of the cream cheese mixture onto each cucumber slice. Place a piece of smoked salmon on top of the cream cheese, gently folding or rolling the salmon to fit the cucumber slices.
  3. Garnish and serve: Garnish with extra chopped dill and a light squeeze of lemon juice for a fresh, zesty touch. Serve immediately, or refrigerate until ready to serve (preferably within 2 hours for the best texture).

Notes

  • Herb variations: You can mix in other herbs such as chives, parsley, or tarragon for different flavor profiles.
  • Lighter version: Substitute the cream cheese with Greek yogurt or cottage cheese for a lighter, protein-packed option.
  • Spicy kick: Add a dash of hot sauce or red pepper flakes to the cream cheese spread for a spicy twist.
  • Avocado addition: Add a thin slice of ripe avocado on top of the cream cheese before adding the smoked salmon for a creamy and buttery texture.
