Ingredients

  1. 1 pound ground beef (80/20 blend recommended)
    Salt and pepper to taste
    8 small flour or corn tortillas
    1 cup shredded lettuce
    1/2 cup diced tomatoes
    1/2 cup shredded cheddar cheese
    Pickles, sliced
    1/4 cup mayonnaise
    1 tablespoon ketchup
    1 teaspoon mustard
    Optional: sliced jalapeños, onions, or avocado

Instructions

Prepare Sauce: Mix mayonnaise, ketchup, and mustard in a small bowl. Set aside.

  1. Heat Pan: Preheat a large cast-iron skillet or griddle over medium-high heat.
  2. Form Patties: Divide ground beef into 8 equal portions; loosely form into balls.
  3. Cook Burgers: Place beef balls on the hot skillet and smash them down firmly with a spatula to about 1/4-inch thickness. Season with salt and pepper. Cook 2-3 minutes until edges are crispy. Flip and cook another 1-2 minutes. Top with cheese and let melt.
  4. Warm Tortillas: Heat tortillas in a separate pan or microwave until pliable.
  5. Assemble Tacos: Spread sauce on tortillas. Add smashed burger patties, then top with lettuce, tomatoes, pickles, and any other desired toppings.
