Slow Cooker Sweet Chili Chicken is a mouthwatering, easy-to-make dish that combines sweet, savory, and spicy flavors in one delicious meal. With minimal prep and the convenience of the slow cooker, this recipe delivers tender, flavorful chicken in a sweet chili sauce. Perfect for busy weeknights or meal prep, serve this dish over rice, noodles, or wraps for a satisfying meal.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup sweet chili sauce
  • 1/4 cup soy sauce
  • 1 tablespoon minced garlic
  • 1 tablespoon rice vinegar
  • 1 teaspoon ground ginger
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons cornstarch (for thickening)
  • 2 tablespoons water (for cornstarch mixture)

Instructions

  • Place the chicken breasts in the bottom of your slow cooker.
  • In a bowl, whisk together the sweet chili sauce, soy sauce, garlic, rice vinegar, ground ginger, honey, sesame oil, and red pepper flakes (optional).
  • Pour the sauce mixture over the chicken breasts in the slow cooker.
  • Cover and cook on low for 4-6 hours, or until the chicken is fully cooked and tender.
  • Remove the chicken breasts from the slow cooker and shred them using two forks.
  • Mix the cornstarch and water in a small bowl to create a slurry.
  • Add the slurry to the sauce in the slow cooker and stir to thicken.
  • Return the shredded chicken to the slow cooker, mixing well with the sauce.
  • Let it cook for another 10-15 minutes to ensure the sauce is thickened and the chicken is coated.
  • Serve over rice or with your favorite sides.

Notes

  • Add vegetables like bell peppers, onions, or carrots for extra flavor and nutrition.
  • For a spicier version, increase the crushed red pepper flakes or add finely chopped jalapeños.
  • Swap chicken breasts with boneless, skinless thighs for juicier chicken.
  • Substitute honey with maple syrup for a different flavor profile.
  • For a gluten-free version, use tamari or gluten-free soy sauce.
