Description

A rich and indulgent Slow Cooker Chocolate Orange Pudding that combines the deep flavors of cocoa with zesty orange chocolate segments. This easy-to-make dessert is perfectly moist and fluffy, slow-cooked to perfection and topped with melted chocolate for a luscious finish.


Ingredients

For greasing

  • 20 g Unsalted butter (At room temperature, for greasing)

Pudding mix

  • 100 g Unsalted butter (Melted)
  • 250 g Self-raising flour
  • 125 g Soft light brown sugar
  • 30 g Good quality cocoa powder
  • 1 tsp Baking powder
  • 3 Eggs
  • 150 ml Milk (Whole or semi-skimmed)
  • 2 tsp Orange extract
  • 157 g Terry’s Chocolate Orange (or other orange-flavoured chocolate), roughly chopped

Topping

  • 150 g Soft light brown sugar
  • 20 g Good-quality cocoa powder
  • 500 ml Boiling water


Instructions

  1. Grease the slow cooker bowl: Thoroughly grease the slow cooker bowl with 20 g of room temperature unsalted butter to prevent sticking during cooking.
  2. Prepare the pudding mix: In a large bowl, combine the melted butter, self-raising flour, 125 g light brown sugar, cocoa powder, baking powder, eggs, milk, and orange extract. Mix together until you obtain a smooth, even batter. Pour the mixture into the greased slow cooker bowl and smooth the top. Press most of the roughly chopped chocolate orange segments evenly into the pudding batter, reserving some for decoration.
  3. Make the topping: In a small bowl, mix together the remaining 150 g soft light brown sugar and 20 g cocoa powder. Sprinkle this evenly over the pudding mixture in the slow cooker.
  4. Add boiling water and cook: Carefully pour 500 ml of boiling water evenly over the top of the pudding and sugar mixture. The surface may look unusual but this is expected. Cover the slow cooker with its lid and cook on HIGH for 1 to 2 hours, or until the pudding is firm in the center.
  5. Decorate and continue cooking: Remove the lid and arrange the reserved chocolate orange segments on top for decoration. Replace the lid and cook for an additional 30 minutes to allow the decoration to soften and meld with the pudding.
  6. Serve and store: Serve the pudding warm straight from the slow cooker. Leftovers can be stored in the refrigerator and reheated in the microwave or served cold the next day for a delicious treat.
  7. Alternative oven method: To make the pudding without a slow cooker, prepare the pudding mix as above in a shallow baking dish approximately 27×20 cm. Cover with foil and bake in a preheated oven at 160℃ fan (320℉), 180℃ conventional (350℉), or Gas Mark 4 for 30–40 minutes until firm.
