Description

A hearty, comforting dish where beef becomes incredibly tender after slow simmering with flavorful seasonings, perfect for busy days or cozy meals.


Ingredients

23 pounds beef chuck roast or stewing beef, cut into chunks
2 cups beef broth
1 onion, chopped
3 cloves garlic, minced
2 tablespoons Worcestershire sauce
2 tablespoons tomato paste or 1 cup diced tomatoes (optional)
2 carrots, sliced (optional)
2 potatoes, chopped (optional)
2 tablespoons olive oil
Salt, to taste
Black pepper, to taste
1 teaspoon thyme or rosemary (optional)


Instructions

  1. Season the beef chunks generously with salt and pepper.
  2. In a skillet over medium-high heat, add olive oil and sear the beef pieces until browned on all sides (optional for extra flavor).
  3. Transfer the beef to the slow cooker.
  4. Add the chopped onion, minced garlic, and optional vegetables.
  5. In a small bowl, mix the beef broth, Worcestershire sauce, and tomato paste or diced tomatoes if using. Pour over the beef and vegetables.
  6. Sprinkle thyme or rosemary over the top if desired.
  7. Cover and cook on low for 8 hours or on high for 4-5 hours, until beef is tender and easily shredded with a fork.
  8. Serve hot over mashed potatoes, rice, or with crusty bread.
