- 2 pounds beef stew meat or sirloin tips

2 tablespoons tomato paste
1 teaspoon dried thyme
1 teaspoon dried rosemary

2 tablespoons cornstarch (optional, for thickening)
2 tablespoons water (optional, for thickening) 
Instructions
Sear Beef: Heat olive oil in a skillet over medium-high heat. Season beef with salt and pepper and brown on all sides. Transfer beef to the slow cooker.
- Add Vegetables: Add carrots, celery, onion, garlic, and baby potatoes to the slow cooker.
 - Add Liquids and Seasonings: Pour in beef broth and Worcestershire sauce. Stir in tomato paste, thyme, and rosemary. Mix well.
 - Cook: Cover and cook on low for 7-8 hours or on high for 3-4 hours, until beef and vegetables are tender.
 - Thicken Sauce (Optional): If desired, mix cornstarch and water to make a slurry. Stir into slow cooker and cook on high for an additional 15-30 minutes until sauce thickens.
