Ingredients

For the Tacos:

  • 8 small corn or flour tortillas
  • 1 cup shredded cabbage
  • ½ cup diced tomatoes
  • 1 jalapeño, sliced (optional)
  • ¼ cup chopped fresh cilantro
  • ¼ cup crumbled cotija cheese (optional)

Instructions

  • Prepare the Shrimp – In a bowl, toss the shrimp with olive oil, garlic, chili powder, cumin, paprika, salt, and pepper. Let marinate for 10 minutes.
  • Cook the Shrimp – Heat a pan over medium-high heat. Cook the shrimp for 2-3 minutes per side until pink and opaque. Squeeze fresh lime juice over the shrimp before removing from heat.
  • Make the Avocado Crema – Blend avocados, Greek yogurt, lime juice, garlic powder, cilantro, and salt in a food processor until smooth. Adjust seasoning if needed.
  • Warm the Tortillas – Heat tortillas in a dry skillet or over an open flame until slightly charred and pliable.
  • Assemble the Tacos – Spread avocado crema on each tortilla, add shrimp, cabbage, tomatoes, and any additional toppings.
