Ingredients
For the Shrimp:
- 1 lb (450g) large shrimp, peeled and deveined
 - 1 tbsp olive oil
 - 1 tsp chili powder
 - 1 tsp smoked paprika
 - ½ tsp garlic powder
 - ½ tsp cumin
 - ½ tsp salt
 - ¼ tsp black pepper
 - Juice of 1 lime
 
For the Vegetables:
- 1 red bell pepper, sliced
 - 1 yellow bell pepper, sliced
 - 1 small red onion, sliced
 - 1 tbsp olive oil
 - ½ tsp salt
 - ½ tsp cumin
 - ½ tsp chili powder
 
For Serving:
- 8 small flour or corn tortillas, warmed
 - ½ cup fresh cilantro, chopped
 - 1 avocado, sliced
 - ½ cup sour cream or Greek yogurt
 - Lime wedges, for serving
 
Instructions
Cook the Vegetables:
- Heat 1 tbsp olive oil in a large skillet over medium-high heat.
 - Add the bell peppers and onion, seasoning with salt, cumin, and chili powder.
 - Sauté for 4-5 minutes, stirring occasionally, until tender and slightly charred. Remove and set aside.
 
Cook the Shrimp:
- In a bowl, toss the shrimp with chili powder, smoked paprika, garlic powder, cumin, salt, black pepper, and lime juice.
 - Heat 1 tbsp olive oil in the same skillet over medium-high heat.
 - Add the shrimp in a single layer and cook for 2 minutes per side, or until pink and opaque.
 
Assemble the Fajitas:
- Return the vegetables to the skillet with the shrimp and toss everything together.
 - Divide the mixture among warm tortillas.
 - Top with cilantro, avocado, and a dollop of sour cream.
 - Serve with lime wedges on the side
