Ingredients
- 2 pounds boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 packet Italian seasoning mix
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon red pepper flakes (optional)
- 1/4 cup chicken broth
- Salt and pepper to taste
Instructions
- In a slow cooker, place the chicken breasts and drizzle with olive oil.
- Sprinkle the Italian seasoning mix, garlic powder, onion powder, and red pepper flakes (if using) over the chicken. Season with salt and pepper.
- Pour the chicken broth around the chicken to keep it moist as it cooks.
- Cover and cook on low for 4-6 hours, or until the chicken is fully cooked and shreds easily with a fork.
- Once the chicken is cooked, use two forks to shred the chicken directly in the slow cooker, mixing the seasoning and broth with the chicken.
- Serve the shredded Italian chicken on buns, in wraps, on top of pasta, or in a salad.
Notes
- For extra flavor, add vegetables like bell peppers, onions, or spinach to the slow cooker.
- You can use chicken thighs instead of breasts for a juicier option for a different flavor.
- Add a sprinkle of Parmesan or mozzarella cheese for extra richness.
