Description

These Shortbread Toffee Bars with Chocolate combine a buttery shortbread base with rich, gooey toffee and a luscious chocolate topping. The bars are crisp yet tender and packed with toffee pieces and pecans for a delightful crunch, making them a perfect treat for any occasion.

Ingredients

Shortbread Base

  • 3/4 cup butter, room temperature
  • 3/4 cup brown sugar
  • 1 1/2 cups all-purpose flour

Toffee Layer

  • 1 can (14 ounces) sweetened condensed milk
  • 2 tablespoons butter

Topping

  • 2 cups milk chocolate chips
  • 1/2 cup toffee pieces
  • 1/2 cup salted pecans, chopped

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350ºF (175ºC) and line an 8 x 8 inch baking pan with parchment paper to ensure easy removal of the bars after baking.
  2. Make the Shortbread Base: Beat 3/4 cup of room temperature butter and 3/4 cup brown sugar together until well combined. Add 1 1/2 cups of flour and mix until the dough resembles cookie dough. Press this dough evenly into the prepared baking pan and bake for 15 minutes or until it is lightly golden brown.
  3. Prepare Toffee Layer: In a microwave-safe bowl, combine the can of sweetened condensed milk and 2 tablespoons of butter. Microwave for 1 to 2 minutes until the butter is just melted and the mixture is combined. Pour this mixture evenly over the baked shortbread base. Return the pan to the oven and bake for an additional 12 to 15 minutes, or until the toffee layer is bubbly and begins to turn golden brown.
  4. Add Chocolate Topping: Remove the pan from the oven and immediately sprinkle 2 cups of milk chocolate chips over the hot toffee layer. Return the pan to the oven for 2 minutes to slightly melt the chocolate.
  5. Spread Chocolate and Add Toppings: Remove the pan from the oven again. Using an offset spatula, spread the melted chocolate chips evenly over the toffee layer. Sprinkle 1/2 cup toffee pieces and 1/2 cup chopped salted pecans over the chocolate and gently press them into the surface.
  6. Cool and Serve: Allow the bars to cool completely at room temperature, then refrigerate before cutting into 16 bars to ensure clean slices and a firm texture.

Notes

  • Be sure to use parchment paper to line the pan for easy removal and cleanup.
  • Press pecans and toffee gently into the chocolate to prevent them from falling off after cutting.
  • Refrigerating the bars before slicing helps achieve clean and neat squares.
  • You can substitute pecans with walnuts or almonds based on your preference.
  • Store refrigerated bars in an airtight container to maintain freshness for up to one week.
