Shamrock Shake Dessert Lasagna is a no-bake layered treat inspired by the iconic minty shake. With a cookie crust, creamy mint filling, pudding, whipped topping, and festive garnishes, it’s the perfect chilled dessert for St. Patrick’s Day or mint lovers.
Ingredients
- 36 golden or mint-flavored sandwich cookies, crushed
- 6 tbsp unsalted butter, melted
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tsp mint extract or peppermint extract
- Green food coloring, as desired
- 2 (3.4 oz) boxes instant vanilla pudding mix
- 3 cups cold milk
- 16 oz whipped topping (Cool Whip), divided
- 1/2 cup crushed Andes mints or mint chocolate chips (optional)
- Sprinkles or crushed candies, for garnish
Instructions
Prepare the crust: Mix crushed cookies with melted butter and press into a 9×13-inch dish. Chill to set.
- Make the mint cream layer: Beat cream cheese and powdered sugar until smooth. Add mint extract and green food coloring. Fold in 1 cup whipped topping. Spread over crust.
- Prepare the pudding layer: Whisk pudding mixes with cold milk until thick. Spread over mint cream layer.
- Add whipped topping: Spread remaining whipped topping evenly over pudding layer.
- Top and garnish: Sprinkle with crushed Andes mints, chocolate chips, or festive sprinkles.
- Chill: Refrigerate for at least 4 hours, until fully set. Slice and serve cold.

- No baking required—this is a fully no-bake dessert.
- Chill for at least 4 hours to allow layers to firm up properly.
- Use Oreo cookies for a chocolate variation.
- Peppermint extract can be used, but start with less as it’s stronger.
