Description

Shamrock Shake Dessert Lasagna is a no-bake layered treat inspired by the iconic minty shake. With a cookie crust, creamy mint filling, pudding, whipped topping, and festive garnishes, it’s the perfect chilled dessert for St. Patrick’s Day or mint lovers.


Ingredients

  1. 36 golden or mint-flavored sandwich cookies, crushed
  2. 6 tbsp unsalted butter, melted
  3. 8 oz cream cheese, softened
  4. 1 cup powdered sugar
  5. 1 tsp mint extract or peppermint extract
  6. Green food coloring, as desired
  7. 2 (3.4 oz) boxes instant vanilla pudding mix
  8. 3 cups cold milk
  9. 16 oz whipped topping (Cool Whip), divided
  10. 1/2 cup crushed Andes mints or mint chocolate chips (optional)
  11. Sprinkles or crushed candies, for garnish

Instructions

Prepare the crust: Mix crushed cookies with melted butter and press into a 9×13-inch dish. Chill to set.

  1. Make the mint cream layer: Beat cream cheese and powdered sugar until smooth. Add mint extract and green food coloring. Fold in 1 cup whipped topping. Spread over crust.
  2. Prepare the pudding layer: Whisk pudding mixes with cold milk until thick. Spread over mint cream layer.
  3. Add whipped topping: Spread remaining whipped topping evenly over pudding layer.
  4. Top and garnish: Sprinkle with crushed Andes mints, chocolate chips, or festive sprinkles.
  5. Chill: Refrigerate for at least 4 hours, until fully set. Slice and serve cold.
